What I can uninstall programs pre-installed?

Recently I had to use my boot disk for a full recovery of my computer (Windows XP). I got rid of a lot of shit that is obvious, the silly games and such, but I had questions about others. "I can uninstall all Microsoft Plus? I do not know what they are. In addition, I use a different virus program and it is suggested to uninstall Norton (my free trial expired years ago).
